Herb-Infused Vodka

Last Monday, I infused some vodka with rosemary and mint from our garden. I let them sit in the cupboard for a week, and removed all of the solids. I think I like the mint a little better than the rosemary.

I'm trying to think of what else to do with all this mint we've been growing. Mint chutney, mint-infused simple syrup, mint-infused whipped cream over chocolate cake...

Dried mint to stir into brownies or chocolate cake this winter.

yum, the texture on those mint leaves is really lovely. i love adding it to salads and spring rolls, and mint ice cream of course.

Fresh mint in a yogurt smoothie with fruit and half a cucumber is awesome... gives a very fresh flavor.

I've been making our big pitchers of summer iced tea with one regular tea bag and about a half a cup of loosely packed dried mint from the garden. Brew, sweeten, and chill...refreshing!!!

I infuse vodka with mint and give them out at the Holidays with homemade marshmallows and hot chocolate. Always a big hit!

If you do chicken mayonnaise, but chop some fresh mint into the mixture, it's lovely.
